Pork knuckle baked - a classic recipe

One of the options for the quick cooking of roasted shank at home - without pre-boiling and marinating for many hours.

Ingredients:
  • knuckle - 1-2 pcs .;
  • onions - 2 pcs .;
  • potatoes - 1 kg;
  • garlic - 3-4 cloves;
  • rosemary sushi. - 1 tsp;
  • peas black pepper - 1 tsp .;
  • salt - 2 tsp;
  • Lavrushka - 3 pcs.
How to cook:
  1. Vegetables and spices are prepared, knuckle cleared, you can start cooking. Grate the garlic or crush with a press. Put rosemary in a mortar, add peppercorns, break laurel leaves into pieces, grind everything thoroughly, add garlic, mix.

  6. Wash the tubers of medium size, peel (young can be left in the peel), cut into quarters. Put in a bowl, add a little salt, pepper, you can add your favorite spices, mix, spread around the shank 20-25 minutes before it is ready.

How to bake shank in foil or in the sleeve

A dish cooked according to this recipe will be tasty both cold and hot. Its rich, intoxicating aroma with fruity notes will fill the kitchen in a matter of minutes. And when it is ready, you will not have to call home twice! Its taste is perfectly complemented by vegetables, but also a side dish of potatoes, especially young ones, will also work.

Ingredients (for one shank weighing 1.5 kg):
  • 30-35 grams of liquid honey;
  • 4 garlic cloves;
  • 40 ml of soy sauce;
  • half a lemon and an orange;
  • 25-30 g adjika;
  • salt and spices (to taste).
Cooking:
  1. Prepare the shank, wash well and scrape under running water, dry with a multi-layered paper towel.
  2. Squeeze orange and lemon juice. Mix adjika and honey, add spices, sauce, pour in a mixture of juices, mix, if necessary, then add salt. Shoulder dish evenly coat the mixture, put in a deep bowl, cover with foil, let stand in the refrigerator or in a cool place for 2-4 hours.
  3. Cut the garlic into plates, put half of it in a sleeve tied on one side, then send shreds and garlic residues to it, pour marinade, tie the other side of the sleeve well.
  4. Place the sleeve in the form, pierce the top in several places with a toothpick, put in the oven for 2-3 hours, cook at 180 degrees.
  5. Be careful not to get burned by steam, make a full-length incision on the sleeve. Bake for about 15 minutes. In the end, should appear brownish crust, causing appetite and the desire to eat it soon.

Knuckle recipe in both the Czech Republic and Germany

What are the most famous "beer" countries? That's right - Germany and the Czech Republic! Naturally, the knuckle there is prepared with this national frothy drink. It is first brewed in a beer with apples (it is possible without them), and then baked according to a long-standing national tradition with sauerkraut. It is cooked in the oven in a beer simply, not quickly, but you don’t need to “stand over the pan”.

Ingredients (for one and a half to two kilograms of shank):
  • beer (preferably light) - 1.5 l;
  • carrots - 2 pcs .;
  • bulbs - 2 pcs .;
  • apples cf. size - 2 pcs .;
  • sauerkraut - 1.5 kg;
  • garlic 4-5 cloves;
  • honey 2-3 tbsp. l .;
  • greens, salt and spices - to taste.
Cooking:
  1. Vegetables and fruits, cut into large pieces, it is better to take apples hard and sour. All poured into the pan, add spices, mix, put the knuckle. Pour all the beer (about a quarter of the glass left for the marinade), add salt, cook a couple of hours (depending on size), but do not overcook so that the meat does not lag behind the bone.
  2. Prepare the marinade from the remnants of beer with the addition of pepper, honey, garlic and beer.
  3. Cover the baking sheet with sides with foil, pour a little broth from the pan, put a layer of cabbage on it, and put the shank on it, cut the rhombus with the skin, smear it with honey mixture. Repeat when baking every 10-15 minutes, so as not to overdry.
  4. Leave a little broth, when the dish is heated, then pour a little on a baking sheet or frying pan, then the meat will keep juiciness and taste freshly prepared.

Shank baked in dough - a simple dish for the holiday table

Unusual dish from the series "lazy", but very tasty. Appetizing crispy bread crust eaten without residue. It is described in just 3 short words: easy, fast and tasty!

Ingredients:
  • knuckle - 1 pc .;
  • salt - 2 tsp. (1 teaspoonful of meat and 1 teaspoonful of dough);
  • peppercorns - 10 pcs .;
  • water - 1 cup;
  • flour - about 550 g;
  • garlic - 4 cloves;
Cooking:
  1. Mix the chopped peas peppers with grated garlic, and a teaspoon of salt, smear the knob on all sides, let stand for a couple of hours and soak.

Garlic, prepared for mashing, cut in half lengthwise, roll in a mixture of pepper with other spices, and then paste into the incisions.
